Focaccia bread is a traditional Italian appetizer from the Ligurian region
. The wood fired oven was mainly conceived for cooking pizza and focaccia being the best device for it. Its refractory floor and internal steel structure make for the best results possible. Cooking will be faster and you’ll be able to make 2 focaccias at a time.

  1. Prepare the pizza dough following this 5 step recipe
  2. Make it in portions of 100-150 g
  3. Let the dough rise for at least 2 hours (depending on room temperature; the warmer the air, the faster it rises)
  4. Stretch it, being careful to get air bubbles in the dough
  5. Add oil, rosemary and salt before baking
  6. Cook in the oven at 300°C for 3-4 minutes

“500 grams of super-fine floor, 35 cl of water, 12 cl oil (extra vergine), 12g of salt , (5-6g of yeast for a fast rising or 2g for a slow rising).”
